My food journey has been a long one, and not always pretty. I admit it- I am a cheeseburger fiend. But, over the years as I’ve learned more and more about where our food comes from and the side effects of processed foods, I’ve started to change. It’s been a really slow process but I was finally ready to take another step, whatever that meant for me. I feel lucky to have come across Alicia Silverstone’s book, The Kind Diet. It really breaks it all down in a palatable way. There were things I already knew, like that eating meat is the leading cause of global warming. But, there were plenty of things I didn’t know or think about, like that the boy babies from milk cows become veal. I never ate veal because I thought it was just TOO cruel. So, this helped me reframe my need for cheese a little.
The Kind Diet encourages us to know the information and make steps, however small they are doesn’t matter as long as we’re taking them. The recipes and tips I’ve tried so far are great, nothing too tough. I have found that after reading this book, it has felt more natural for me to make a kinder choice at most meals. Modifying what we eat is not just good for our waistlines, it’s great for the planet. Even if you aren’t ready to make any changes yet, just allow yourself to be informed.
