Viva Vegan! by Terry Hope Romero

Being of Latino descent, I am a die hard lover of the cuisine. Unfortunately, this does not always jive with a slim waistline or healthy arteries.  Enter “Viva Vegan,” Terry Hope Romero’s very entertaining Latin-vegan cookbook.  When I received this wonderful book as a gift, I was kind of like “huh?” I was grateful, but I was also confused. Vegan and Latin food together is more like oil and water than peanut butter and jelly. Or so I thought. This woman is some sort of genius. My fiancée and I decided to try some recipes out.

The first recipe we tried was Tostones with Avocado and Palm Ceviche.  For you gringos out there, tostones are green plantains which are flattened and fried.  The avocado and palm ceviche was a perfect combination of citrus and creamy deliciousness.  Piled on the cripy tostones….  Mmmmmm, completely luxurious!

The second recipe was the Arroz con Coco aka Savory Coconut Rice.  You would have thought this dish had a pound of butter in it, it was so rich.  We did make a few improvisations.  We used currants instead of raisins. This was actually a mistake; the boxes look the same!  We thought it was a nice mix, though, because the currants are actually smaller than raisins, so they were subtle but delightful.  We also added one star anise, and in the last 5 minutes of cooking we threw in some cashews.  The extra little crunch from the cashews really added something delicioso.

I am so excited to try all 200 recipes.  I was completely satisfied and I did not feel like I was missing a thing.  I can’t wait to try some of this stuff out on my parents.  Thank you, Terry!
